TASTING NOTE
Bold aromas of riper passionfruit and tropical citrus, provide a heady bouquet that jump from the glass expressing the vibrant flavours of pure Waihopai Valley Sauvignon Blanc. The rich palate is full and juicy, countered by crunchy acidity that offers a deliciously long and moreish finish.
FOOD MATCHING
The ripe, tropical nature of this wine will pair beautifully with soft cheese such as brie or camembert, but also poultry or other white meats. Try alongside a creamy cheddar and spring onion risotto with balsamic roasted tomatoes or baked Tuscan chicken served a top of mashed cauliflower or with a mediterranean chickpea salad.

WINEMAKING
The combined use of expressive ripe fruit and oak influences align to promote the very best of what this wine has to offer. Select parcels of fruit are field destemmed and gently pressed into stainless steel tanks. Roughly racked to ferment using stainless and oak with select yeasts, it develops an extra dimension of full-bodied flavour to the wine; ranging from ripe mango to spicy vanilla.

A warm and wet winter spurred an early start to the growing season with fully charged soil moistures and warm ambient temperatures in early spring. The few frosts through September and October did little to disrupt the healthy development of strong, lush canopies.
Flowering began with cooler temperatures and periodic bouts of rain in the early summer, with the weather improving as we headed towards Christmas; typical with respect to warmth, sunshine hours and rainfall.
Late summer warmth in late February and March along with careful canopy management, delivered slowly ripened, disease free, incredibly clean fruit!
Harvest commenced in mid-March. Due to the long, cool ripening season, fruit was harvested significantly later than usual but retained all of its vibrancy of flavour and crisp, ripe acids. The team are excited by the bright flavour expressions and huge diversity of character coming through in the wines of the 2023 vintage.
